Prenal is a colorless to pale yellow transparent liquid with a pungent odor resembling a blend of almond and fresh grass (developing cherry and nutty notes upon dilution); it is sparingly soluble in water but miscible with ethanol, diethyl ether, acetone, ethyl acetate, and hydrocarbons. Although it is a neutral molecule, the α,β-unsaturated aldehyde moiety exhibits electrophilic character.

Primary Uses

 

Flavoring Agents/Food Flavors: FEMA 3646, JECFA-approved; available in cherry, raspberry, blackcurrant, nut, bread, and chicken flavor profiles; usage levels in the mg/kg range.
Synthetic Intermediates: For the production of citral, isophytol (Vitamin E side chain), Vitamin A, carotenoids, and pharmaceutical/agrochemical intermediates.
Organic Reaction Reagents: Model compounds for α,β-unsaturated aldehydes; used in hydrogenation (Ru/Pt/Rh) and electrochemical dimerization studies.

Safety and Physiology

 

Toxicity: Low to moderate toxicity. Oral LD₅₀ (rat) ≈ 690 mg/kg; dermal LD₅₀ (rabbit) ≈ 3400 mg/kg; inhalation LC₅₀ (rat, 4h) ≈ 3700 mg/m³.
Irritation: More irritating than ordinary saturated aldehydes-poses a risk of severe eye damage (H314/H317: corrosive and sensitizing); inhalation irritates the respiratory tract; high concentrations cause anesthesia.
GHS: Danger; H226 Flammable; H302 Harmful if swallowed; H314 Causes severe skin burns; H317 May cause an allergic skin reaction; H331 Toxic if inhaled.
Storage and Transport: UN 1989, Class 3, PG III; store under nitrogen blanket, sealed, at 2–8°C, protected from light; keep isolated from oxidizing agents, strong acids/bases, and air.
